Chicken Caprese Bake

  • 6 boneless skinless chicken breasts
  • 2 packages IP tomato basil soup
  • 5 cups raw spinach
  • 1 red pepper
  • 1 tsp crushed garlic
  • 1 tsp dry marjoram
  • 1/2 tsp dry oregano
  • 1/2 tsp dry rosemary
  • 1/2 tsp dry thyme
  • 1 tsp black pepper
  • 1/2 cup (1/4 package) SW Cheese curls – crushed
  • 4 small campari tomatoes – sliced
  • 1 bunch fresh basil

Cook chicken breast in frying pan partway. You don’t want them completely cooked because they will go in the oven for about 20 min.

Meanwhile, steam spinach until tender. drain excess water.

Cut and seed peppers into large strips. place on cookie sheet and broil until brown. Be careful not to burn them.

Shake up 1 package of tomato soup with 3/4 cup water. Mix together cooked spinach with 1 package tomato soup in bottom of 9X13 casserole dish. Spread out in an even layer.

Layer chicken breast over the spinach/soup mixture.

Shake up the other tomato soup with 3/4 cup water and all the dry spices. Pour over top of chicken breasts. Bake for 30 minutes on 325.

Remove from oven and top with crushed SW cheese curls and fresh campari tomato slices. Sprinkle fresh basil over entire casserole. Serve.
